How to use it
With its delicate and characteristic flavor, it is excellent for topping main courses and as a base for “Mediterranean” pasta sauces. You can put
it between layers of a lasagna dish together with mozzarella, grated Parmisan and fresh basil leaves, or you can pair it with a potato gnocchi
first course, simply as the dressing sauce, adding some grated Pecorino Romano and Black pepper. It can also be used for creating a sauce base for a meat dish or for a fish one as its delicate aroma can be easily paired to different ingredients, not covering but enriching tastes and flavors.
