Grape: 100% Malagouzia
So, Tatsis Malagouzia Orange is an orange wine made from a Malagouzia grape grown at 250-300 m above sea level and cultivated using organic and biodynamic principles. When the grapes reach optimum ripeness, they are harvested and sorted by hand, gently crushed and macerated with the skins for 30 days. It then ferments with the marc and finally remains on its lees for 12 months in oak barrels.
Winemaking
Destemming, controlled slow fermentation for over a month (30+ days) with the native yeasts of the grape. Aging for 18 months with the lees in oak barrels and then bottling. Without the addition of sulphite from vinification to bottling without filtering.
