Grape: Nebbiolo
Grappa obtained from the distillation of the Nebbiolo grape pomace.
Distillation process: the distillation of Nebbiolo pomace, dripping with wine, takes place in a state-of-the-art plant in order to preserve all the aromas and varietal fragrances intact. The still used is discontinuous, steel, and inside the pomace are crossed by a jet of steam, which carries the alcoholic vapors. These, subsequently aspirated into a distillation column, produce a distillate that originally has a gradation of 70-75 degrees. The grappa is aged in small wooden barrels of 225 liters. After a year it is added with distilled water until it is brought to the gradation indicated on the label.
