AGED Tsipouro is dominated by apple, along with vanilla, chocolate and soft velvet taste in the mouth, result that comes from the barrel-ageing.
Marcs are being placed in distilleries made of copper, after the winemaking process, with a small quantity of must, where they are subjected in low heating in order to distillate the whole amount of Alcohol. Then the distillate is subjected to dilution and second distillation, from which the ‘head’-the first part of the distillation, and the tales-the last part of the distillation, are being removed. That is the way for us to take the ‘heart’of Debina: ‘Debina’s soul’.
The distillate is aged in oak barrels for at least one year.
