Description
Grape: 100% Nebbiolo
Winemaking:
The grapes are hand-harvested with strict selection in the vineyard and again at the winery to ensure only the highest quality fruit is used. Fermentation takes place in temperature-controlled stainless steel tanks, followed by extended maceration on the skins to extract fine tannins, aromatic complexity, and structure.
After fermentation, the wine is aged for 12 months in large Slavonian oak casks, respecting the Nebbiolo grape’s elegance and terroir expression, followed by further bottle aging before release. The 2021 vintage benefited from a balanced growing season, producing a wine of great precision, purity, and aging potential.
Food Pairing for GAJA Barbaresco
The GAJA Barbaresco offers bright acidity, fine-grained tannins, and expressive notes of sour cherry, rose petals, licorice, and forest floor. These qualities make it ideal for pairing with refined, flavorful dishes.
Recommended pairings include:
- Herb-crusted lamb rack or slow-roasted duck breast, where the wine’s structure and savory tones complement the richness of the meat.
- Porcini mushroom risotto or tagliatelle with truffle, enhancing the wine’s earthy, floral elements.
- Veal Milanese or roast guinea fowl, balancing delicacy with depth.
- Aged cheeses such as Pecorino Toscano, Taleggio, or Parmigiano Reggiano make excellent accompaniments, especially as part of a cheese course.
- This Barbaresco is also well-suited for dishes with wild game, root vegetables, or complex sauces, making it a versatile partner for elegant dining.
