Distillation in a steam-heated copper still. Aging in oak barrels. Marriage of the barrels 6 months to a year before bottling
The brandy is barrel-aged and appears beautifully amber in the glass, with a seductive potpourri of ripe plums, vanilla and spice in the aroma, followed by a soft and deep intense fruit in the taste and a pleasant, final warmth. One is tempted to write, this is liquid plums, bottled.
