Description
Grappa obtained from the distillation of fresh pomace of Chardonnay grapes.
Distillation process: Chardonnay pomace is fermented separately in September and immediately afterwards, still soft and juicy, started to distillation. A discontinuous alembic, which works under vacuum, is used. A distillate with an alcohol content varying between 70 and 75 degrees is obtained; which, before bottling, will be diluted with distilled water until the gradation indicated on the label is brought.
