Description
The basis of this sake is Yamadanishiki rice, which is considered the highest quality rice variety for premium sake. For this bottling, it has been polished to 45% of its original rice grain size in order to achieve a particularly pure, elegant aroma. The special feature of this Daiginjo lies in the yeast used: Imazu Benikanzakura, a new cherry blossom yeast discovered in Nishinomiya, Japan, in 2019. It gives the sake a delicate, floral profile that is complemented by a subtle honey sweetness and soft fruit aromas. Despite its mild aroma, this sake finishes pleasantly dry and structured – a harmonious interplay of fruit, elegance and clarity.
Ideal with sashimi, nigiri sushi, grilled fish, scallops, but also with mild tempura or Asian-inspired vegetarian dishes.
