Description
Grape: 100% Chardonnay
Soil: Within this one cuvée you can find a snapshot of Pouilly-Fuissé’s geological complexity. In Fuissé, a third of the vines are grown on west-facing granit soil – a mixture of schists, volcanic sedimentary sands and rhyolitic tuff – the remainder, wich face east, are mostly planted on limestone and Jurassic marls, but there are also some deposits of clay. In Vergisson, soils are composed with sandstone, clays from Trias and hard limestone.
Winemaking
The smallness of 2023 permitted to ferment and age all the cuvees in oak barrels.
Aging during 10 months in barrels (25% new oak), then 9 months in tank. The wine stays on the lees until bottling, in March 2023.
