Grape: 100% Malagouzia
Characteristics: Grapes from organically grown vineyards with the use of biodynamic practices and the least possible intervention.
The 30-year-old vines grow at an altitude of 300 meters in the clay and sand-rich hills of Macedonia using biodynamic philosophies and no irrigation. The grapes are hand-picked and then taken for pre-fermentation extraction before the fermentation is started using indigenous yeasts and low intervention. The wine is matured for 1.5 months on the fine lees, before being bottled without filtering.
Winemaking
Destemming, pre-fermentation extraction for 24 hours at a low temperature (8-10 C) then controlled slow fermentation with the native yeasts of the grape and 12 months in tank with the fine lees.
