Description
Winemaking and ageing
The grapes were harvested by hand between 7 and 19 September 2023 and carefully selected before vinification. Fermentation was carried out parcel by parcel in temperature-controlled vats. The wine was subsequently matured in French oak barrels, including a proportion of new oak, to develop complexity while preserving its fruit, freshness and elegant Pomerol character.
Food pairing
Château La Fleur-Pétrus 2023 pairs beautifully with:
- Beef fillet or Chateaubriand
- Beef Wellington
- Roast lamb with rosemary
- Duck breast with a red-wine reduction
- Slow-braised beef cheeks
- Venison and other game
- Truffle risotto
- Porcini mushroom dishes
- Mature Comté, Gruyère or aged Cheddar
Serve at 16–18°C. If enjoyed while young, decant for approximately two to three hours. Ideally, allow the wine several years of bottle ageing for its full complexity to emerge.
