Description
Grape: Merlot with small amount of Cabernet Franc
Winemaking:
The wine is aged in French oak barrels, a significant portion of which are new, for around 18 to 20 months.
This ageing process enhances complexity while respecting the fruit. It adds subtle notes of cedar, spice, cocoa, and toast, while allowing the wine’s structure to integrate and soften over time.
Pairing Insight
The wine’s firm tannins and depth balance rich, fatty dishes, while its earthy and truffle notes complement slow-cooked meats and game. For best results, serve slightly below room temperature and allow time in a decanter to open up.
Food Pairing
This is a serious, structured Pomerol that works best with flavourful, protein-rich dishes.
