- Fermentation: Slowly fermented with indigenous yeasts in stainless steel tanks.
- Aging: Aged in old oak barrels for 20 years in Hatzidakis Winery’s naturally cool cave cellar, allowing oxidative evolution without excessive wood influence.
- Bottling: Bottled unfiltered in limited quantities, preserving its natural complexity and authenticity.
