Description

Grape: 85% Assyrtiko 15% Aidani and other native white varieties

Winemaking: 

  • Harvest: Handpicked at full ripeness in late August 2004.
  • Vinification: The grapes were sun-dried for 12–14 days, concentrating their sugars and flavors.
  • Fermentation: Slowly fermented with indigenous yeasts in stainless steel tanks.
  • Aging: Aged in old oak barrels for 20 years in Hatzidakis Winery’s naturally cool cave cellar, allowing oxidative evolution without excessive wood influence.
  • Bottling: Bottled unfiltered in limited quantities, preserving its natural complexity and authenticity.
