Winemaking
Gentle pressing and static settling for 24 hours. Fermentation in temperature-controlled stainless-steel vats, between 15 and 18°C. This long fermentation at low temperature preserves more intense and more delicate aromas.
Aged for 5 to 6 months on fine before bottling
Best Food Pairings:
Shellfish and Seafood: Oysters, crab, lobster, and pan-seared scallops match the wine’s sharp acidity and saline minerality.
Fish: Grilled or pan-fried white fish like turbot, sole, or sea bass, as well as meaty fish like salmon and swordfish.
Goat Cheese: Classic regional pairing with Crottin de Chavignol or fresh goat cheese, especially with herbs or toasted sesame.
Poultry and White Meat: Grilled chicken or roasted poultry served with light cream, lemon, or herb sauces.
Vegetables: Asparagus dishes and fresh green salads with vinaigrette dressing
