Winemaing & Ageing
The Chardonnay grapes are hand-harvested from Domaine Long-Depaquit’s 2.6-hectare parcel in the steep, south-facing Vaudésirs Grand Cru vineyard. The calcareous clay soils over Kimmeridgian limestone marl give the wine its hallmark Chablis minerality and freshness.
Fermentation takes place with 75% in stainless-steel vats and 25% in oak barrels aged between one and five years. The wine then matures for 10 months on fine lees, again split between stainless steel and mature oak, before a final six months of ageing in stainless-steel vats. This careful approach adds texture and complexity while maintaining purity, precision and the elegant character of Chablis.

Chablis Grand Cru “Les Vaudésirs” is an elegant, structured white wine with the freshness and mineral precision to complement refined seafood and delicate, flavourful dishes.
It pairs especially well with:
- Oysters, especially fine de claire oysters
- Lobster, langoustine or crab with a light butter or citrus sauce
- Seared scallops with cauliflower purée or beurre blanc
- Grilled Dover sole, turbot or sea bass
- Sushi, sashimi and premium seafood platters
- Roasted chicken or guinea fowl with a light cream and mushroom sauce
- Veal medallions with lemon butter or white-wine sauce
- Goat’s cheese, Comté or aged Gruyère
For an elegant dinner, serve it with grilled turbot or lobster thermidor the wine’s citrus character, fine texture and saline mineral finish are a particularly beautiful match.
