Winemaking
The selection of the grapes which takes place in mid-September is very meticulous. After a soft pressing, the temperature is immediately decreased in order to nurture the settling and elimination of matter present in the must. Fermentation takes place in stainless steel tanks at a controlled temperature (14-15°C). The wine then ages in stainless steel tanks until February at a temperature of approximately 10°C so as to maintain intact the patrimony of the bouquet
