Winemaking
The grapes, harvested fermented for 9 days between 23oC and 28oC of temperature, followed by a 10-day maceration. The vineyard that gives this wine is cultivated in glass, without irrigation, without chemical fertilizer, middle age, strict pruning in winter, pruning in green in June, balance in the cultivation and harvest by hand. Performance three times lower than that of vineyards growing in back. Grapes of three times higher quality. Result each plant, each strain, only gives one bottle.
It ages 18 months, and a year in the bottle.
