Fermentation:
Careful selection of the grapes allows only the best bunches to be dedicated to the production of this wine. The soft pressing is followed by a sudden lowering of the temperature to favor the decantation of the must. Fermentation takes place in steel tanks at a controlled temperature, between 13 and 15 °C. The subsequent refinement continues until February and takes place in thermo-conditioned steel tanks, at a temperature of 10°C necessary to preserve its aromatic heritage
