Grape: Grenache Noir, Syrah, Mourvèdre
Winemaking
Long traditional maceration: 2 weeks for Grenache and 3 weeks for Syrah and Mouvèdre. At first, a lot of letting go. The grape varieties are vinified separately. Fermentation with native yeasts and temperature-controlled maceration (30oC). Complete malolactic fermentation. Final clarification by filtration, absence of bonding.
