Description

Grape: 85% Syrah, 15% Viognier

Terroir:The Chatillonne, an exceptional cuvée from the House produced since 1781, comes from vines located at the northern limit of Côte Blonde. The soils consist of gneiss and clay. This specific terroir, influenced by the Le Reynard stream, produces grapes with exceptional maturity and characteristic aromatic complexity..

Winemaking

Manual harvesting of co-planted Syrah and Viognier, grape sorting, destemmed harvest vinification, alcoholic fermentation under controlled temperature, two to three weeks of maceration with regular punch-downs, and post-fermentative warm maceration. Aging in oak barrels for two and a half years, including 50% new barrels.
