Winemaking
Manual harvesting of co-planted Syrah and Viognier, grape sorting, destemmed harvest vinification, alcoholic fermentation under controlled temperature, two to three weeks of maceration with regular punch-downs, and post-fermentative warm maceration. Aging in oak barrels for two and a half years, including 50% new barrels.
