Winemaking
After crushing, alcoholic fermentation is carried out for about 15 days in small, stainless steel tanks with repeated pump-overs for adequate color extraction. Maceration continues after fermentation for a total period of 40-45 days. Then, the wine ages in oak barrels for at least 40 months before it is transferred to stainless steel tanks and then the bottle. After about seven years from the harvest date, the wine is ready to enter to market.
Barolo is one of the great red wines of Italy’s Piemonte region and a superb match for dishes such as venison. Made from the Nebbiolo grape, it offers elegant aromas of sour cherry, dried herbs, and rose petals, while ageing brings notes of truffle, leather, and earthy complexity. Its firm structure and vibrant acidity make it an excellent partner for rich game meats.
Pairing: This Barolo Ginestra Cascina Chicco goes perfectly with roasts, grilled meats, game and aged and meditation cheeses.
