Winemaking & Ageing
The Chardonnay grapes are harvested entirely by hand to protect their quality and ensure that only healthy, carefully selected fruit reaches the winery.
Fermentation takes place in oak barrels, with approximately 30–35% new oak. This gives the wine structure, texture and gentle notes of toast and spice without overwhelming its fruit or freshness.
The wine is then matured for 14–16 months on its fine lees in oak barrels. Lees ageing adds richness, depth and a smooth texture while preserving the wine’s natural balance and mineral character.
