Grape: Vermentino
Appelation: Vermentino di Sardegna DOC
Production Area: Sardinia. Vineyards located along coastal and hilly areas exposed to the Maestrale wind, on sandy, granite-derived or calcareous
soils typical of the island’s terroir.
Vineyards: Vermentino from 10–25-year-old vines, trained in Guyot orspurred cordon. Medium yields that preserve varietal intensity and aromatic sharpness.
Vinification: Harvest in late August–early September. Soft pressing and fermentation in stainless steel at controlled temperature to preserve freshness
and aromatic purity. Short maturation on fine lees to enhance minerality and texture.
Food pairing: Fish and seafood, sushi, shellfish, fresh cheeses, light Mediterranean dishes.
Typical pairings: Fregola with clams, bottarga, fresh Pecorino cheese.
